For harmonica™ wafers we use only wholegrain einkorn flour which is naturally low in gluten to make the crispy crusts. Then we add sunflower seeds paste, cocoa and coconut butter to start the cream. And this wafer flavour is an innovation to be proud of - having 4 probiotic cultures added: L. bulgaricus, Bifidobacterium longum, L. plantarum, L. gasseri for more goodness. The harvested teff is cleaned, sterilized and blended to guarantee a clean standardized grain that can be used for milling, as an ingredient in other industrial processes or to pack into consumer sized packing. There are two varieties available: white and brown teff

To make this product , we cook, roll and dry the teff. The result are small flakes with a slight toasted nuts aroma. One of its main proparties is a great capacity to bind water. It is used for bread, mueslis, porridge, for adding to yogurt, for decoration on bread and biscuit, chocolate products,bars,etc.
Teff flakes can substitutebread crubs and other cereal in meat products and they are excellent for making vegan and vegetarian products. Very good meat replacement products can be made.
