Les Davids

A rare and preserved terroir for exceptional wines : a vineyard located at 580 meters above sea level and nestled in a protected valley, on the edge of the Ventoux.
Les Davids is voluntarily conducted in organic farming, guaranteeing the preservation of biodiversity and the presence, on the grapes and in the cellar, of natural yeasts whose quality ensures perfect fermentation.
The design of the winery has been imagined in such a way as to use gravity in all the different processes of wine making in order to respect the quality, the integrity and the work done upstream.
From the selection of the vines to the winery, everything is written in the soil.
Nature has taken care of this land, providing it with water and good exposure, with a varied biotope of soils and sun exposure depending on the hillsides, which makes it possible to adapt and cultivate multiple grape varieties.

Les Dernières Terres
This complex and elegant blend of Syrah, Merlot and Cabernet Franc offers aromas of red fruits mingling with the spicy nuances of its maturation in demi-muids. The harmony of the mouth with fine and coated tannins presents a fresh and persistent finish. The wine reveals the authenticity of the high-altitude terroir from which it comes and its capacity to produce great wines for ageing.

Ageing: 18 months in demi-muids and wooden barrels
Pairings: the spicy and powerful structure of this wine goes perfectly with a Provencal stew with peppers and game on the spit.

The purest expression of the Syrah grape variety. This wine opens with notes of great fruity intensity carried by a subtle woodiness. The attack is supple, elegant and enhanced by fine tannins, the mouth seduces by its crisp and ample side.
