Aioli is one of the oldest sauces in the world, and one of the simplest: garlic and oil. In contrast to many industrial versions made with thickeners, spirit vinegar, and garlic powder, our vegan aioli goes back to the original.
Cold-pressed rapeseed oil, real garlic oil in a noticeable quantity, almonds instead of egg, and white wine vinegar instead of spirit vinegar create a bold, creamy, and surprisingly light aioli.

It goes well with grilled vegetables, chicken, or fish fillet. It is also a classic accompaniment to artichokes and asparagus, and works well with fondue.
