This reserve cava vintage 2019 is born from a complex selection of best organic grapes from vineyards in the high areas of Requena. It has remained in total calm for more than 25 months at 15ºC and without any sudden changes in temperature or light. Natural spontaneous fermentation without added sulphates in open stainless-steel tanks with temperature regulation. Pellicular maceration 15 to 18 days with manual punching down twice daily and two final "délestages".
24 to 30 months in 225-litre French oak barrels with a maximum of 33% new barrels.
Full deep cherry. Strong and complex aroma of black fruit confit, liquorice, a fine toasted edge (black cacao), and a touch of minerals (graphite). Dense and elegant in the palate, with a great, lengthy personality.

Varietal Composition: Xinisteri 100%.
Vineyard: Blend of vineyards on both VSP and Goblet at Paphos Region.

Soil: Silt loamy soil.
Vinification: Fermentation in stainless steel tanks at low T °C. Battonage applied for 3 months.
Colour: Yellow with green hints.
Nose: Citrus and green fruits of lemon zest, pear and gooseberry.
Palate: Fruity, elegant, well-structured, round middle palate and refreshing finish.
Serving Suggestions: Enjoy it with light spicy sauces, white meat, Fish dishes or as a refreshing aperitif.
Best serve at 8 degrees Celsius.
