Our whisky is crafted from field to glass – rooted in nature, independent, and handmade with care. On our family farm in Dunsum on the island of Föhr, we oversee every step of the production process ourselves. The barley grows on our own fields, is traditionally floor-malted on-site, brewed, distilled, and matured in oak casks in our hayloft behind the dike – all without external sourcing, all in one place.
We produce a Single Estate Whisky, which not only comes from the barley of a single farm but is also created in a closed-loop system. The nutrient-rich mash left over from distillation is fed directly to our cattle, and the manure is used as natural fertilizer for our fields. This circular approach links agriculture, livestock, and whisky production in a sustainable way – in harmony with nature and with future generations in mind.
By practicing traditional floor malting, we not only retain full control over quality but also preserve a rare craft that is hardly practiced today. We consciously avoid industrial processes and external raw materials.
The harsh North Sea climate, the salty air, and our unhurried production process give our whisky its unmistakable character. Every drop tells the story of our island, our work, and our values: independent, nature-connected, and with the true taste of Föhr.
Each January, when the island and our farm are still at rest, Jan and Jonas select the finest American oak casks from our warehouse in the old hayloft. These barrels form the foundation of our Distillers Cut. In addition to the medium-toasted American oak, we choose a special cask to make the Distillers Cut an extraordinary experience. Whether it's a Sherry cask or another unique combination, our selection ensures a harmonious balance that brings depth to the whisky. The Distillers Cut symbolizes a bridge between the past and the future – reflecting the memories and joy of the past year, while looking forward to the possibilities of the new one. The American oak provides a familiar, comforting note with a smooth mouthfeel. A maritime influence, shaped by the cask and the salty air, adds a subtle briny touch. Vanilla, toffee, chocolate, and fruity notes, such as dried plums, envelop the palate, while the introduction of something fresh and new adds an exciting twist. What truly sets our Distillers Cut apart is its exceptionally long, malty finish.
Some casks are simply too exceptional to be blended – they deserve to stand alone. We don’t actively search for our next Single Cask. Instead, it finds us. When Jan and Jonas take the time to sample from our warehouse, there’s always that one barrel that stands out — powerful, complex, and full of character. It’s immediately clear: this cask must be bottled on its own. Each Single Cask release comes from one barrel only, resulting in a strictly limited number of bottles – unique and unrepeatable. From growing our own barley to crafting a high-quality New Make, we’ve learned a lot over the years. But when it comes to cask maturation, we know it takes decades of experience. That’s why we’re grateful to have Julia Nourney, a renowned international spirits expert, by our side. During her annual visit to the island, she evaluates up to 60 casks in a single day, guiding our cask management and identifying those rare barrels with the potential to become a Single Cask. Each release is a tribute to craftsmanship, instinct, and the singular character of one extraordinary barrel.
The Harvest Edition reflects the many challenges we face in organic farming, harvesting, and processing our barley. From unpredictable weather and climate conditions during cultivation to the delicate art of floor malting in both warm and cold seasons – every drop tells the story of our hard work. Matured by the North Sea, this whisky carries a gentle maritime note that brings depth and character. It reminds us of the coastal breeze and the barley grown in our island's fresh, salty air. This edition is more than just a whisky – it’s a tribute to agriculture and craftsmanship. A heartfelt thank-you to the land and all the effort it takes to bring in the harvest. With rich notes of caramel, vanilla, honey, and warming spices like clove and cinnamon, the Harvest Edition offers a full-bodied and comforting flavor. Subtle fruity undertones add complexity and balance. Aged in ex-bourbon casks and refined with a carefully selected second cask, this whisky blends tradition with nature’s variety. The result is a harmonious expression that honors our harvest and our commitment to sustainable farming.
